The King’s sun egg

I’d like to dedicate this page to my beloved His Majesty King Phumibol Adulyadej of Thailand (King’s Rama 9 who passed away two years ago).


This Sun Egg is called  “Khai Phra Arthit” (Khai = Egg, Phra Arthit = Sun) in Thai was His Majesty’s culinary creation when he was young and lived overseas.

It was his most favorite dish and he used to make it for his children.

It is an omelette with grains of cooked rice.

Why it’s called “Sun Egg” , according to His Majesty “When you look through binoculars, the sun’s surface appears similar to grains of rice. In French, it’s called grain de riz.”

Estimate time to prepare: 10 minutes.
Estimate time to cook: 10 minutes.
The recipe serves 4 people.

Ingredients

1. 3 cup of cooked Jasmin rice

2. 8 Fresh eggs.

3. 1 tablespoon of fish sauce or Maggi sauce

4. 3 tablespoon of vegetable oil

5. chopped cilantro for garnish (optional)


LET'S COOK

STEP 1: Preparing the mixture

- Crack 8 eggs into a mixing bowl then add 3 cup of cooked Jasmin rice into the bowl. After that, add 1 tablespoon of fish sauce. Mix everything together.


STEP 2: Fried the King’s sun egg

- Heat up the oil in a pan, medium heat.

- Add the egg mixture into the pan. Cook until the eggs are mostly set but the center is still a little runny and the bottom starts to turn golden brown.

- Flip the eggs with a spatula. Let the other side cook until golden brown.


Tip1: To test if the oil is hot, drop a tiny bit of egg mixture into the pan. If it is sizzling, that means the pan is hot and ready.


Tip2: Don't worry if it breaks, it does not have to stay in tact, it will still taste good.


STEP 3: Serving

- Turn off the heat and put The King’s sun egg on the serving plate and garnish with some chopped cilantro (optional). Enjoy the King's Sun Egg!


Tip3: Eat with Sriracha sauce, Thai sweet chili sauce, or ketchup.
