This Thai-style coconut pancake (Baa Bin) is cooked on a hot griddle
and is a favorite street food.

Estimate time to cook: 30 minutes.
The recipe serves 4 people.

Ingredients
1. Glutious rice flour 300 g.
2. Sugar 125 grams
3. Coconut milk 150 g.
4. Young coconut meat 300 g.
5. ¼ teaspoon salt
6. Butter fly pea water or Pandan water 50 ml. (Optional)
7. Vegetable oil for frying pan
LET'S COOK
STEP 1: Preparing the mixture
- Mix the gluteus rice flour, sugar, salt and knead with coconut milk.
- After it’s mix together, add young coconut meat. Slowly add the limestone water which has been scented with the Pandan or Butter fly pea
- Continue to knead until the mixture is wet and the cream from the coconut meat is pressed out and blended in with all the other ingredients.
STEP 2: Grill
- Grease the heated surface of a griddle with the oil.
- Drop the coconut mixture in spoonfuls onto the hot griddle, molding them into small flat rounds.
- Grill over low to medium heat until golden brown. Flip over and grill the other side until also browned. Best served warm.

- Flip over and grill the other side until also browned. Best served warm.
